Taco Soup
1 pound ground beef
1 small onion, chopped
1 bell pepper, chopped
2 cans whole kernal corn; undrained
2 cans pinto beans; undrained
2 packages taco seasoning
1 1 ounce package Hidden Valley Ranch dressing mix
1 large can diced tomatoes
1 can tomato paste
1/2 cup picante sauce (I use medium)
2 cups water
salt and pepper to taste
tortilla chips
grated cheddar cheese
Brown ground beef in a soup pot with onion, bell pepper; drain. Add corn, pinto beans, taco seasoning, dressing mix, tomatoes, tomato paste, water, picante sauce, salt and pepper; mix well. Simmer one hour. Serve in bowls with crushed tortilla chips and cheese.
